Position Description Summary Assure a high standard of appearance, hospitality and service in personnel and cleanliness of dining room.
Ensures timeliness of food service.
Supervise and train dining room staff.
Manage within budgetary restraints.
Develop and implement programs to increase revenues through repeat business and higher check averages.
Supervises Dining Room and Card Room Bar staff Directly reports to F&B Director Duties and Responsibilities Responsible for management of dining room and card room service in the main clubhouse.
Maintains a high level of member contact throughout service hours.
Knowledge of and ability to perform required role during emergency situations.
Designs floor plans according to reservations.
Manages reservations for the dining room and card room, closing out blocks of time when busy to control the flow of service.
Maintains 90 day dining reports and dining blocks for breakfast, lunch, and dinner events displaced by banquets and club events.
Greets and seats members and guests.
Inspects dining room employees to ensure that they are in proper and clean uniforms at all times.
Hires, trains, supervises, schedules and evaluates dining room staff.
Confirms time, attendance and hours worked and approves departmental payroll every pay period.
Receives and resolves complaints concerning dining and card room service.
Serves as liaison between the dining room and kitchen staff.
Assures that all side-work is accomplished and that all cleaning of equipment and storage areas is completed according to schedule.
Directs pre-meal meetings with dining room personnel; relays pertinent information such as house count and menu changes, special member requests, etc.
Assures the correct appearance, cleanliness and safety of dining room areas, equipment and fixtures; checks the maintenance of all equipment in the dining room and reports deficiencies and maintenance concerns.
Makes suggestions about improvements in dining room service procedures and layout, developing and updating SOP’s.
Trains staff on all aspects of the POS system.
Maintains buttons on POS system and member preferences in Northstar.
Closes Clubhouse Tuesday thru Saturday, assures that the dining room and other club areas are secure.
Maintains an inventory of dining room items including silverware, coffee pots, water pitchers, glassware, flatware and china, salt and pepper holders, sugar bowls and linen and ensures that they are properly stored and accounted for.
Develops and implements an ongoing dining room concepts with the Executive Chef to increase dining room business.
Works with Executive Chef to update, review and print menu changes.
Oversees private rooms that are serviced by the dining room.
Attends scheduled staff meetings.
Submits monthly revenue forecasts and assists with budgeting as needed.
May serve as club’s opening and closing manager or manager on duty.
Assures that local and state laws and the club’s policies and procedures for the service of alcoholic beverages are consistently followed.
Books all entertainment for dining room and sets calendar with F&B Director.
Maintain personnel files with HR to include 90 day reviews, annual review and disciplinary actions as needed.
Implement and monitor sanitation and cleaning schedules.
Performs other appropriate assignments and projects as required by the Food and Beverage Director.
Works holidays and weekends as business dictates.
Physical Demands and Work Environment Ability to lift 25 lbs Ability to carry trays of food Ability to open wine bottles Standing on feet for up to 8 hours FT Salaried position requiring 45-55 hour per week as business dictates Education and Experience High School diploma or GED equivalent.
Fine dining experience, wine knowledge is preferred.
Pay Salary $60,000 - $70,000 based on experience.
