Palolo Chinese Home specializes in serving elders with no age minimums or limits.
Our nursing staff starts with an assessment of all prospective residents to determine their needs.
Admission is based on functional abilities and nursing care needs.
Primary Purpose: Prepares and portions food items in accordance with physician prescribed diets and production requirements.
Uses daily production worksheets and standardized recipes to cook meals.
Perform various duties in accordance with sanitation standards.

Essential Duties/Functions:
Prepares food items in a timely fashion following production time schedules, prescribed recipes, procedures and guidelines.
Prepares regular and modified foods for residents utilizing diet modification guidelines and recipe compliance.
Maintain proper production levels according to estimates on the production sheets.
Be aware of inventory level and notify Lead Cook or Manager of times and quantities needed for production.
Assists with menu development, serving food items, food ordering, and demonstration cooking and resident tray assembly.
Maintains proper rotation of food to assure top quality and freshness.
Ensures all foods are properly labeled, dated, and stored.
Minimizes "leftovers" through compliance to production standards.
Maintains clean and orderly refrigerators and work areas.
Make sure the stations are properly cleaned, sanitized, and organized at the end of the shift (including cleaning of kitchen equipment).
Follows proper food handling procedures including maintaining food in a temperature safety zone.
Initiates corrective action as required.
Monitors food spoilage.
Follows and adheres to food safety and sanitation polices, including State and Federal safe food handling guidelines and regulations.
Maintains accurate food production and waste records.
Accurately records all assigned data collection tasks.
Qualification Requirements:
High School diploma or general education equivalent
At least 1 year of experience as Cook or equivalent position in food preparation
Must be knowledgeable of food prep, proper knife handling, temperature control and sanitation is required
Must be able to read, understand and follow recipes, instructions and productions records
Must be able to stand for an extended period of time, lift equipment up to 100 lbs.
with assistance and carry objects weighing up to 50 lbs.
Must be able to withstand various kitchen elements such as heat, steam, fume, refrigeration and freezer temperature
Must be able to meet strict deadlines for meal time
Must be able to perform simple mathematical calculations
