Job Purpose: The Dishwasher/Utility Staff is responsible for the cleanliness and sanitation of
kitchen items to include workstations, equipment, and dinnerware.
The following are essential functions of the job:
• Sorts, empties, relines, and takes out garbage receptacles regularly to avoid overfilling,
ensuring trash bins are closed at all times.
• Follows appropriate sanitation policies and procedures.
• Checks the PH levels on the three-rinse sink three times a day coinciding with B/L/D
service and documents readings on Sanitation Concentration Log, adjusting as needed.
• Checks the temperature on the dishwasher three times a day coinciding with B/L/D
maintaining temperatures logs in accordance to Department of Health standards.
• Washes china, glassware, silverware, pots and pans, daily as scheduled.
• Assists in the deep cleaning of work surfaces and kitchen equipment as needed.
• Sweeps and mops the kitchen floors daily, as needed or directed.
• Notifies supervisor of any broken hazardous or unsafe equipment and operates with
safety in mind at all times.
• Maintains appropriate hygiene and dress codes standards as designated by the
Department of Health and adheres to kitchen standards.
• Provides relief to dining room servers as needed as applicable by communities.
• Discusses department concerns with supervisor as appropriate.
• Works collaboratively with other departments, attends community meetings, trainings
and in-services as assigned.
• Is familiar with disaster and fire plans as specified in the policies and procedures manual
and assists with building emergencies as instructed.
• Adheres to all employment requirements established in the Team Member Handbook,
the Operating Policies and the Procedural Manuals.
• Performs other duties as assigned by Food Service Director.
Required
• Current Tuberculosis clearance, according to State of Hawaii Department of Health
regulations.
• CPR and First Aid Certification.
Preferred
• High school diploma or equivalent.
Physical Requirements
Frequent standing and walking, bending, stooping, pushing, pulling, and occasional lifting; in
addition, must be free of communicable disease and meet community policies and procedures
regarding necessary physical health
